Chocolate is a wonderful thing. However, when you’re trying to lose weight chocolate can be a very tempting mistress that tends to lead people astray.
Being a Trim Healthy Mama, things are a little different. Chocolate is welcome – encouraged even!
When you eat these beauties, you won’t believe they are sugar free, low carb, and full of zucchini.

Here’s a list of what you’ll need:
Chocolate Zucchini Muffins (THM S)
- 1/2 c coconut oil
- 1/2 c butter
- 1 bag Lily’s chocolate chips
- 2 c grated zucchini (about 2 medium zucchini)
- 2 Tsp unsweetened cocoa powder
- 1 cup coconut flour
- 3/4 c xylitol
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp instant espresso (optional)
- 4 eggs
Wait until they completely cool to try one. The texture is pretty soft straight out of the oven, but they are divine. This recipe makes about 2 dozen muffins. I find they keep best in a Ziploc bag in the fridge.
