Chicken Bacon Ranch Power Salad (THM S)

I always thought the term “power lunch” was about the actual food people at while at lunch. Something light, yet filling, that would give you “power” to get through the rest of your day.

{Come to find out it means something totally different, but I digress.}

This meal definitely fits the bill for a “power lunch” – it’s easy, delicious, light, and filling. The reason it’s so easy, is because everything is already cooked. All you have to do is throw the salad ingredients together and slap some dressing on it. EASY.

Chicken Bacon Ranch Power Salad (THM S)

Ingredients

  • 1 6oz chicken breast, pregrilled and sliced
  • 2 slices thick-cut bacon, precooked (possibly from the morning)
  • 1/2 an avocado, cut into big chunks
  • thin slices red onion
  • 1 roma tomato, chopped
  • thin slices English cucumber
  • salad greens (I used a mix of green leaf lettuce and spinach)
  • 2 Tbsp ranch dressing (sugar free)
  • small handful of parmesan cheese Whisps (crackers made only from cheese. Not necessary, but give the salad a nice crouton-like crunch.)

Directions

  1. Assemble the salad, measure the dressing, and toss everything to coat. If you’re packing this to take as a work lunch, leave the dressing and Whisps (if using) until later. If serving immediately, toss everythi together at once.

Also, here’s a tip on cooking bacon. If you want to cook a lot of bacon at once, cook it on a broiler pan in the oven.

The bacon cooks evenly while the fat drains to the bottom pan. You’re welcome!

Bake it at 400 for about 10-15 minutes.
